Winemaking: Organic Chardonnay grapes grown on 60 year old vines in Meursault were harvested by hand. Fermentation with wild yeast and aged in old oak barrels for 15 months. Unfiltered, unfined, no added sulphur.

This Wine: Full bodied white Burgundy that is round and rich but has the high acidity to match. Citrus, white flowers and minerals. Best served with food. Will age very well for a long time to come.

Notes on the Winemaker: Philippe Valette took over his family winery in 1990 and almost immediately introduced organic farming practices so these vines in the south of Burgundy have been worked organically for over 30 years. He has developed a serious reputation despite never being one to shout about himself. The wines are a true reflection of this amazing Burgundian terroir and should be treasured .
