Winemaking: Organic Pedro Ximenez, Montua and Vigiriego grapes were harvested by hand. Fermentation with indigenous yeast. Bottled with no filtration, fining or added sulphur.

This Wine: This is the white version of the cuvée. Amazing intensity of rich, stone fruit flavours supported by a strong mineral and smokey finish. A complex, dry wine that is best served with food. 

Notes on the Winemaker: Samuel Parraga produces wines that are a true reflection of Andalusia's climate and viticultural history. He works with native grape varieties to create dry, sweet and oxidative styles without ever adding sulphur.
