Fermented in stainless steel tanks. Aged in a mixture of old barrels and ceramic vessels for 12 months. No filtration or fining. Everything good about  is present but dialled up to another level. A greater intensity of fruit is brilliantly balanced with more pronounced herbal notes. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir.
