Grape Variety: Pinot Noir

Producer: Fédéric Cossard (Domaine de Chassorney)

Region: Volnay, Burgundy, France

Wild Scale: 4/5

Winemaking: Organic Pinot Noir grapes from 70 year old vines planted on granite soils were harvested by hand. Fermentation in whole bunches with indigenous yeast. Aged for 9 months in concrete egg. No filtration, fining or added sulphur.

This Wine: Light, elegant and delicately complex red wine. Red cherry, raspberry and strawberry notes are complimented with a floral, earthy and spicy edge. Drinking well now but will get even better. 

Notes on the Winemaker: Despite not coming from a winemaking family, Frédéric Cossard has made a huge name for himself with his 10 hectares of vines in Burgundy as well as his negotiant project that allows him to purchase grapes from Beaujolais and further afield. He is committed to organic and homeopathic practices, ensuring pristine fruit and has become known for using concrete eggs and Georgian qvevris instead of oak barrels, resulting in lively, pure, and detailed wines.
