Winemaking: Organic Premsal and Callet grapes were harvested by hand. Co-fermented with indigenous yeast and aged in old barrels 9 months. No fining, filtration or added sulphur. 

This Wine: Natural rosé wine made with a blend of Eloi's red Callet grapes and Cati Ribot's white Premsal. Hazy pink in the glass with concentrated lemon, raspberry and salt. The best pink lemonade you ever tried! 

Notes on the Winemaker: We first became aware of Eloi around 2016 whilst he was working as a winemaker for 4Kilos in Mallorca. Despite the warm climate of the island, he was producing delicate but complex wines that brimmed with Balearic character. Later he moved into the cellar of Cati Ribot to focus on his own cuvées under the Sistema Vinari name. These wines offer even more personality and always find the perfect balance of wildness and precision.
