Winemaking: A field blend of organic grapes grown in a vineyard over 100 years old were hand harvested and de-stemmed. Macerated and co-fermented in stainless steel with indigenous yeast. No fining, filtration or added sulphur.

This Wine: Natural wine made from a blend of red and white varieties. Delicate and mineral driven, it's hard to believe this is a wine from the hot and dry region of Minervois. Light in body but with great complexity. Fresh and pure, this is a special bottle. 

Notes on the Winemaker:  Anne-Marie Lavaysse established her domain in the 1990s before getting her son Pierre on board. The family take a holistic approach to farming, rearing livestock alongside growing fruit and vegetables and have achieved Demeter certification for their 5 hectares of land. The wines are delicate and pure but showcase such a beautiful depth of flavour, it's easy to see why they are becoming cult classics.
